Hotel Group Backs Sustainable-only Seafood

A Scottish hotel chain is launching a fishy campaign to offer only seasonal fish on its menus.

The Macdonald Hotels & Resorts’ initiative will mean that only fish that is in season that month will reach the plates of diners.
 
The company, which has 17 properties in Scotland, said the aim was to enable chefs to buy and serve fish from sustainable sources. If successful, it will be rolled out across its 68-strong estate.
