Broccoli


Originally hailing from Italy (broccolo means ‘cabbage sprout’), this superfood contains more vitamin C than an orange, and more calcium than a glass of milk. Recently, scientists have discovered that it also contains DNA repairing chemicals that can prevent cancer.

Nutritional notes aside, the florets can be put to good use in a range of dishes – whether steamed, boiled or stir-fried, and add a tasty crunch when chopped into pasta sauces or 'disguised' for kids in pizza toppings. Buy fresh young heads from the end of March.

Cook’s Tip: Try broccoli with sesame seeds. Split a 1lb head of broccoli into florets and cook in a small amount of salted water until tender (around 15 minutes). Then, put 1tbsp of oil in a small pan and gently toast 1tbsp of sesame seeds until golden brown, add 1tbsp vinegar, 1tbsp soy sauce and 1tsp sugar. Bring to the boil then drain the broccoli and place in a bowl, pour over the sauce. Serve as a side dish with grilled fish or chicken.
