Cod
This large white fish has the versatility of chicken – absorbing any flavour that’s thrown at it – and has been the stalwart of Scottish chippies for decades. Sadly, though, cod stocks in the North Sea, Irish Sea and west of Scotland are among the most heavily depleted in the world, so the environmental choice is to opt for hoki or pollack, which has a similar taste and texture, and is more sustainably fished.
