Lemon Sole
Regarded by many as one the finest fish, this flat fish has a sweet flavour that's more like shellfish. Though the texture is less dense than Dover sole, it too is best cooked simply without lavish accompaniments. Grill on the bone with butter and take a hint from the name by adding a squeeze of lemon.
Cook’s Tip: Always make sure you buy your fish from a sustainable source, which have minimum landing sizes and well-managed stocks. Avoid eating immature fish during the breeding period from April to August.
