Parsley


This flat or curly leaved herb provides a welcome touch of green, and vibrant taste, to an otherwise dull winter palette. Commonly overlooked as simply a garnish, parsley was considered a sacred plant by the ancient Greeks and has many health-giving properties. It's full to bursting with antioxidants and vitamins C and A and some studies suggest it can protect against rheumatoid arthritis. Combine with bulgur wheat, spring onions, mint leaves, lemon juice and olive oil to make tabbouleh, add to a homemade pesto sauce for added flavour or use it to make a rub for meats by combining with garlic and lemon zest.

Cook’s Tip: If you have excess parsley, dry it by laying it out in a single layer of kitchen paper. Once dried, it should be kept in a tightly sealed container in a cool, dark and dry place.
