Rocket

This fast growing salad leaf has a peppery, tangy taste but no bitterness and can be harvested as a cut-and-come again, if you’re growing your own. A rich source of vitamin C, it can be used raw in salads or used as a spinach substitute and lightly blanched or steamed. Use wild rocket if you want a stronger flavour.

Try: making a peppery pesto from rocket leaves, as you would basil, blend with root veg and 1 pint of veg stock for soup, or serve with feta and a drizzling of balsamic.
