Sea Trout
This large round fish is similar to salmon, and appears in many Scottish rivers and lochs on the south and east coasts every summer, having swum in from the North Atlantic. As they are nocturnal creatures and only become active at night they’ve become something of a prize among anglers who like a challenge. Stocks of sea trout have declined markedly in recent years, with the fish running the gauntlet of the salmon farms.
Top Tip: Cook a whole fish for an impressive centrepiece or ask your fishmonger to fillet it, and serve in any way you would salmon.
